  • 1/4 tsp asafoetida (hing)
  • 1 tbsp chopped coriander leaves

For Tempering (Baghaar):

  • 1 tbsp ghee or oil
  • 1/2 tsp mustard seeds
  • 1/2 tsp cumin seeds
  • 1 dry red chili
  • 1/4 tsp fenugreek seeds (methi)

Traditional Serving Style:

  • Earthen pots (matka) for enhanced cooling
  • Crushed ice (optional)
  • Fresh mint leaves for garnish

Instructions

Step 1: Prepare Buttermilk Base

1. Whisk buttermilk with water until smooth.
2. Add roasted cumin powder, black salt, and regular salt.
3. Tear curry leaves and add to mixture (reserve some for garnish).
4. Add slit green chili if using (remove later for mild version).

Step 2: Prepare Tempering

1. Heat ghee/oil in small pan on medium flame.
2. Add mustard seeds, let splutter.
3. Add cumin seeds, fenugreek seeds, and dry red chili.
4. When seeds turn aromatic (30 secs), add asafoetida and immediately remove from heat.

Step 3: Combine & Rest

1. Pour hot tempering over buttermilk mixture.
